Made chicken lettuce cups for dinner. Think it was IP Ph1 friendly. Everything was on my sheet so I think so, but you tell me. I chopped 1lb chicken breast into small cubes and marinated in 1/2t of dried orange peel, 1T soy sauce, 2t apple cider vinegar, 2t olive oil, a dash of hot sauce and garlic powder, 2T of fat free chicken broth, about 1/4c water and chopped green onions. Marinated for a couple of hours, then tossed into a sauce pan until chicken was cooked (about 5 mins). Made 1 lettuce cup and had a side of riced cauliflower. I felt like the spices might have been a little heavy, but it's spread over 3 portions (I have leftovers! ). Hope I didn't blow it. What do you think?
