What do you do when your ads are stuck in "In Review" for days? I launched some campaigns on Monday and they're still not active!

Appeal to that and explain why ads need to be reviewed asap, I would usually express my frustration in an ethical way, and that usually gets them to take action.

I would say just be patient for a day or two. And in the meanwhile make sure everything on the add is correct according to FB ad policy.
