Is it against fb rules to start an ad copy with ""? And is it okay to start it with "Did you know playing the guitar can make you more successful in life? "? Or fb doesn't like it?

It improves coordination, self discipline, etc., so it does (there are studies so it's not really misleading)

and having those things doesn’t make you more successful. So your headline is an outright lie. 1. It will get disapproved 2. If anyone did see they would probably be very disappointed when they got to your site etc and that will kill sales

"Did you know playing the guitar can make you more successful in life? " Maybe try: Some people say guitar players are more successful. FB tends to dislike "you" in my experience. Not saying you won't get approved with what you have.
