How would you prioritise your highest-converting products in a shopping campaign? Just by using bid adjustments?

Probably separate into its own campaign and exclude from the other campaigns and bid how you wish. Maybe set a ROAS you'd like and let the automation gods do its work.

Would you use any automated rules for a shopping campaign?

@urana895 Case by case basis. Automated rules work when it wants but its not a silver bullet. You should have enough skill to get manual working before you earn the right to do automated for scale as long as you know your metrics.

@differ How would you create a separate campaign for best sellers? Would I need to create a new product feed for them?
