Seems like a lot of cooking. If I am not grilling for some weird reason I will set the oven to 500 with a dry cast iron. Drop a seasoned (s&p fresh cracked pepper) hunk of meat in it for 2 min a side. mine are usually thick so it's med rare. I will do butter at the end. With garlic and rosemary for lean cuts. Fatty cuts just get a few shakes of salt grass 7 season. but I would eat that steak too :)
