Anyone have some great, healthy, lower carb and fat meal ideas? I've changed my eating habits significantly this last month and am now stuck on new ideas. I already make the following a lot: grilled chicken with veggies, taco salads w ground Turkey, vegan chili, deconstructed egg rolls, hummus crusted chicken, etc. Help! Bonus points if it includes fresh ingredients I have available: - chicken, ground beef, ground chicken, ground Turkey, ground pork, pork chops - broccoli - spinach - yellow pepper - carrots - celery - rutabaga - acorn squash - green lentils - quinoa - rice

Makes atleast 8 peppers. I often use the mix to eat without peppers as a meal. Add a little cheese. So yummy!

Fajita chicken over spinach or use low carb tortillas, soups, bbq chicken salads, baked fish, roasted veggies are my fave, sloppy Joe’s, Kung Pao chicken

I make gyros substituting the meat with sautéed portobello mushrooms (I make my own spice recipe) homemade tzatziki sauce on a charred flour tortilla topped with kale chopped very fine and red onions. It’s absolutely delicious

Do you have an air fryer? I absolutely love mine but it makes it really easy to do low carb healthy meals. I honestly just do a little olive oil salt and pepper on most proteins and whatever vegetables I put in there and they turn out delicious

Brita~ I love mine so much. Stephen’s Mom gave us one for Christmas and I think I’ve made 75% of my meals in there  makes it so easy to eat healthy and stay on track because everything still tastes so good

Zoodles with a hearty marinara. So yummy! If you have time, you can bake eggplant and serve with ricotta and spinach. It’s so freaking good!

Spinach, sausage and white bean soup. Chicken meatballs, egg scramble with veggies, zucchini noodles with sautéed meat and tomatoes. I use homemade broth to make pan sauces also. make a big batch and freeze in small amounts to easily throw in a pan with juices from cooking.

I use the zero carb bread from aldi with smoked salmon, cream cheese, cucumbers and everything but the bagel seasoning from trader joe for a quick meal. I do this quite frequently lol. I also do air fried chicken wings without breading.

I love ground chicken buffalo meatballs. I bake them in a mini muffin pan so they get a better edge. I eat them with an avocado. Chicken apple sausage with sweet potatoes spinach and onion is another favorite of mine. Sauté all together. I love quinoa bowls! —- if you cook ahead all the fixings you can change it up. I love making traztki sauce to have to throw on my bowls. Especially full of veggies over quinoa.

What about stuffed peppers made with the ground turkey (sautee onion, add minced garlic and salt to taste) add some cooked rice, and a can of tomatoes and some marinara and seasonings- fill, bake and then top with a little low fat mozzarella until melty?
