After my attempt to build a fort for my LOs , since it worked I was kicked out of my living room for the whole day caught up with all my chores and was thinking  “what’s for dinner tonight” I decided on some BARBACOA  Just missing my home made tortillas since jewel was out of Maseca! Looks yummy! We picked up some rotisserie chicken and we are planning on warming it up in melted butter, seasonings and lots of lime for tacos!  I’m also making Spanish rice!

Yum that looks amazing! We had enchilada casserole tonight. but I didn't take pix. it's like layering lasagna in a pan but it's chili/corn tortillas / shredded cheese. repeat them bake until hot and bubbly! Yummy, EASY, and a FABULOUS way to use leftover chili without feeling like ur eating leftovers
