All the time! I made a yellow cake mix with one egg, three ripe bananas, and a cup of water. I baked it in my ndividual cupcake pans and it made 24 at 1 points each. I froze 18 of them. I can take out one or several at a time. prep for future snacks.

I have replaced apple sauce for oil equal amounts and in an angel food cake box mix added a 15 oz can of crushed pineapple (the whole can) including the Juice in place of all the other ingredients called for. Mix as usual bake as usual. Banana should work as an equal sub for oil. Make sure they are well mashed so they are liquified it your cake will be way heavier. It will be heavier without the oil but so so dense if there isn’t a liquified banana purée

I did but wasn’t a fan. I like bananas but the texture was not very cake-like. I like to substitute Fage 0% Greek yogurt for the oil. I do add the eggs if it calls for them.

I made banana bread with yellow sugar free cake mix, 4 bananas, and two eggs. It also needed 1/2 cup water. They were just OK. I like the applesauce better.
