I make chicken tortilla soup a lot.
by (460 points)
@symploce I like that it’s slow cooker too! Makes meal prep a lot easier!
by (1.2k points)
@disappearance7226 it’s a go to for when I’m trying to lose fast for a weigh in lol I think it’s 0-1 point and sometimes I add sour cream and cheese but I like it just fine without the added stuff.
by (460 points)
@symploce perfect! I use greek yogurt for my sour cream so it will keep it zero point!
by (310 points)
@disappearance7226 with the tortillas it’s still 0 points?
by (460 points)
@maniemanifest23 I imagine no. But there are some tortilla stripes that are low in point. I find them with the croutons or in the produce section. So like 2-3 points for a decent about.

@disappearance7226 thanks!

Black bean soup and minestrone!
by (460 points)
@schick79 do you have recipe link for the minestrone? I like black beans but not enough for a soup lol
by (4.6k points)
Black bean soup might surprise you it is super flavorful!  And this is my favorite minestrone of course you can leave out the pasta but I usually include it  https://thefoodcharlatan. com/minestrone-with-sausage/
https://cookieandkate.com/spicy-veg...soup/
by (460 points)
@schick79 I like pasta so I’ll probably include it too lol. And I’ll give it a try. I’ll wait till by boyfriend is coming so if I don’t he can help eat it. He will eat anything lol
by (4.6k points)
It makes a lot! Lower points leaving out pasta and sausage but even as is it is a healthy meal
by (460 points)
@schick79 I can freeze half. I eat the same thing all week cause it’s just me. And I’m ok with budgeting points for something I like. I normally splurge one meal (8-12). And keep the other two to about 6-8 total. I get like 30 pts a day. And I like to snack lol
by (4.6k points)
@disappearance7226 I usually make big batches of things because I don't mind leftovers for a few days in a row. I usually eat a relatively high point dinner and low point breakfast and lunch. I eat so much soup lol I love it

Do you like curry? I make a curried zucchini soup that everyone loves. Take 1 yellow onion, and a bunch of zucchini (8-10), cut into large chunks and place in dutch oven. Add chicken broth about halfway only. Zucchini will release tons of liquid on its own. I add 1 full capful spice island curry powder, lots of fresh ground pepper, and a little salt. You can always adjust later, but careful not to over salt. Boil until zucchini is soft. Puree with imersion blender. I add 1/2 & 1/2 and a sprinkle of shredded cheddar cheese to each individual serving. You don't have to add the milk or cheese and it's zero points.

Chicken stock, chicken breast, corn, hard-boiled eggs chopped, optional diced potatoes, celery or celery salt, salt and pepper. This is PA Dutch chicken corn soup which I grew up on. On blue zero points unless you add potatoes

French onion - cut out a core in the center of a sweet onion and cut several slices straight down but not through to fan it out. Put in in a deep bowl with a bit of water and then put a dab of light butter and about a tsp of bouillon in the center of the onion. Cover, vent and microwave until tender. Take onion out and slice it up. Return to broth. Add seasonings, a few croutons, top with your choice of cheese. Put under broiler if you desire in an oven-safe bowl. Points for croutons and cheese

@okwu I make this one too!
by (460 points)
@okwu definitely will try this!
by (10.1k points)
@disappearance7226 I forgot to mention you don’t use much water when you cook the onion. When you make the soup you will need to add broth. I use beef broth. Hope you like it!

Roasted sweet pepper and tomato! So easy. Roast 6-7 bell peppers, 5 tomatoes, 5 cloves of garlic, 4 onions. Roast well and get a bit blackened, not fully burnt though! Remove skins of peppers and blend with chicken broth. I add some dried basil. That’s it and it’s delish!

I start my taco soup with pinto beans in the crock pot the night before. About a cup and a half of pinto beans in 3/4's crockpot of water. Cook all night (I sometimes put in on really late). In the morning, put one can whole kernel corn (drained to reduce sodium), half to 3/4's bag of coleslaw mix, a diced onion, sometimes diced carrots, a can of white chicken breast meat (sometimes not), and one packet of taco seasoing mix. I cook all day while at work. Then, put in one can of tomatoes and peppers. I don't like big tomatoes so I pour in a bowl and sqeeze all the big pieces out with my hand and throw out any hard pieces. Cook awhile long. The beans and cabbage cook away to almost just a juice. It smells so good cooking. I cook every weekend and have on hand at all times for a quick meal.

I'm on blue and have been for almost two years. 0 point soups have saved my ass. I have made split pea, chicken enchilada, mushroom soup. I mostly improvise, open the fridge and use things I have, they're always my best ones. I use smoked Turkey to flavor the soups, for a change, then remove the turkey legs, or whatever, and use them as a separate meal.
