I use 1 3/4 cups mix, 1 3/4 cups low-fat buttermilk and 2 large eggs. This makes 12 corn muffins. 1 muffin = 4 points on blue plan or 2 muffins for 7 points. I can’t tell any difference.

I use unsweetened applesauce. You can use half the oil then twice the amount of applesauce to maintain moist cornbread.

I use the recipe of 1 cup self rising cornmeal, 2 eggs, 1 can of cream style corn. Bake at 375 for 12-15 minutes. Makes 12 corn muffins. 2 points each on blue. These are really good. Hubby really likes them and he loves cornbread.

@testa4 Upon re-read your recipe, I realized you said "self-rising cornmeal". I used self-rising flour. As mentioned, they were delicious so flour is an option. The flour is slightly (2) points less than the cornmeal. Thanks again!

@alfonso13 I have used this substitution for years no taste difference. If anything sometimes baked goods will be moister. Brownies, cookies etc for the family. They never knew the difference

Didn’t know prepared cornbread mix required oil. The one I sometimes use is only egg & milk.
