You can look up ways to stuff them and roast them. I used to use sausage and veggies but I am looking at other options now for a “stuffing” maybe chicken and veggies or ground chicken. They are so good roasted on a grill or in the oven.

Stuff them. Bread crumbs, s/p, fresh chopped garlic, parsley, oil. Make mixture soft, fill pepper half way, add some shredded cheese, a few pieces of chopped tomatoes and finish with filling. Grill them in a toaster over or non stick pan. Delicious, eat them hot or room temperature.
