In other words, you'll have an interest per ad-set and you'll be able to not only see the effectiveness of the creative and copy, but also test the different targeting options. This way you can kill interests accordingly. If these would be combined in one ad-set, then you would never know. You may; however, narrow and exclude interests and behaviors. Which has a different effect to just adding multiple interests.
