If you can manage manually yes. Ultimately keep as many as possible in one campaign so you can leverage Machine Learning down the line when you accumulate enough conversions.

Hi @wonderland! I have just 6 products, so should I create an ad group for each one of them or is it better to group them all on a single ad group?

Just stick them in a single group and optimise the bids at item id level.

I'd separate them out and use custom labels. Also make sure you have an automatic fetch schedule.

It depends on number o products you have and number of conversions. We separate SSC into twoo groups - selling / non selling (with lower roas).

Im having a very difficult time finding good resources for learning how to efficiently run Shopping Campaigns. Does anyone know of a good one? Everything I've found is fairly outdated.

I mainly use ad groups, when I need to get a better view of the search terms. With 1000s of products the search term reports become hard to scan.  
The Google AdWords Group is where you can always find questions, answers, advice, reviews & recommendations from other community members about successful search engine marketing (SEM) ads through Google AdWords.
