I sear steaks it in grape seed oil. I haven’t tried with out yet.

I Sous Vide my protein with Salt/Pepper/Garlic Powder. Then quick sear with Avocado Oil (high smoke point).

Do you mean in the bag during the bath? Just season in the bag. Use some oil to sear afterwards.
