I sometimes make shakes, using coconut/almond milk, sweetener, vanilla, MCT oil, two eggs, and a teaspoon of chia seeds. I've never had a problem with raw eggs, . Personally I don't think just coffee is nutritionally enough. I also like the Premier shakes you can get at Wal Mart or Sam's, add eggs and oil to them as well. Hope this helps with options, even though it's still eggs.
