Flan experts My 9 year old has tried to make flan but it didn’t turn to a custards. The recipe he is following has no condensed milk or heavy cream. Are you able to make it without these? The recipe he got is half cup sugar, 4 eggs, 2 cups milk. After baking in the oven for 45 minutes, it didn’t turn solid. Even after chill for overnight, still not solid. Advice please Thank you!

Did you put it in a hot water bath in the oven?

What kind of flan? If it is napolitano then it needs sweetened condensed milk and evaporated milk. Some other recipes replace these, like coconut flan has coconut milk and coconut cream and cream cheese flan replaces the evaporated milk with cream cheese. You can’t make flan with just the ingredients in that recipe, at least not what I consider to be flan.

Have him use 5 eggs, can of sweetened condensed milk, can of evaporated milk and a teaspoon of vanilla. Use the sugar to make the caramel and add it to the bottom of your glass baking dish, wait a few minutes to let it harden then add your blended ingredients. In a large pan add hot water to cover about half of your baking dish and turn your oven on to about 375-400 degrees. I find the temperature can vary depending on the oven. I have used both temperatures in different ovens. Once the oven is ready, place your baking dish in the middle. Be careful not to spill. Cover the top of the dish by placing aluminum over once the top is golden. Usually around halfway through. It takes about an hour. Check it with a toothpick. It should come out clean if it’s ready. Let it cool before placing in the fridge for at least 3 hours.

@dogcatcher this recipe calls for 325 degrees. We choose this recipe because it says it’s not as sweet without the condensed milk. I guess we will try with condensed milk.

If you have a pressure cooker I have the best recipe. I’ve made it numerous times and it comes out perfect every time.

@chandelier1813 3 eggs, a can of sweetened condensed milk, a can of evaporated milk, and vanilla extract. I beat the eggs in a bowl then add all the ingredients to egg mixture. Heat up a cup of sugar until it browns and you get your caramel sauce. Pour the caramel sauce into a flanera pan then pour in the egg mixture. Put the top on and place on a rack in your pressure cooker. Make sure you have enough water to cover the bottom half of the pan and then cook for 20-22 minutes. L Pull the pan out and take the top off. Allow it to come to room temp then cover with Saran Wrap and place in the fridge overnight.

If using only milk, you will have to increase yolks, so 3 eggs and 2 egg yolks. Also if you want less sweet add half of condensed milk. Some even add corn starch to thicken it, but I have never done it.

My recipe uses 5 egg yolks, one whole egg there is not much beating. One can evaporated milk, one can condensed milk stir. Melt the sugar over low heat, then let it cool making a candy topping. Pour in the mixture, put the dish into a warm water bath to bake but it cooks for over an hour in the oven. It’s very tricky. I’m Cuban and there’s only two types of flan, great and gross. I’ve never had great flan in any restaurant or bakery. You know it’s good when you make it and people who hate flan are asking for seconds lol. There’s never leftovers.
