My question is what happened when they break it. Since the alarm started sounding, and stopped with a code or app, what does ring do?

As someone said, it has battery backup that lasts 24+ hours plus a cell connection backup in the event of wifi loss. Ring did go as far as thinking, "What if someone rips it off the wall? " Which is why it has a "tamper proof" alarm as well. So if someone tries to destroy it, nothing will happen, but make the alarm go off faster. The motion sensors also have the same tamper protection.
