If I bake a sweet potato, I will scoop out flesh and mash up with pineapple, or sometimes feta cheese for a savoury note. Can also boil sweet potatoes and do the same. Both are delicious.

Sukrin Gold is my fave, can tell it from brown sugar, next would be the Swerve one. I avoid all splenda/sucralose artificial ingredients as the body cannot process them.

Cut them up in pieces and roast them with a little cinnamon and cayenne pepper and salt and pepper and a little olive oil. Their natural sweetness comes out and you really don’t need anything else on them.
