When I lookup points, for example a Wendy’s Homestyle chicken wrap (9points), do the points already include the ranch dressing, lettuce and cheese?

It is typically the points for the item as intended (unless otherwise specified). So a chicken wrap would include sauces, and any other fillings as Wendy's designed. If the sauce wasn't included, it would say "no ranch dressing. "

That's one downside of WW. I don't see as many user submitted customizations like MFP has. For stuff like that you're better off going to the Wendy's website, building your meal without the sauces/buns/whatever, then using the calculator to add the points.
