Monday: crockpot salsa chicken served over cauliflower rice Tuesday: ground turkey tacos (always on Tuesdays) Wednesday: salmon, asparagus and couscous Thursday: artichoke chicken, green beans and couscous Friday: I weigh on Fridays, so we always either order in or go out to dinner!

@latinist32 mission white corn tortillas (Walmart). 5 points for 3 tortillas (I’m on green plan). My taco Tuesday is a total of 14 points. I always budget for it!

@sensitive Because we have been on WW , so long, most of what I cook is just from my head. Mostly lean ground Turkey in place of ground beef. White chicken breasts, lean pork. Then just make up meals. I have always loved to cook, so it's easy for me. BTW, I am 71 years old ( so have done a lot of cooking) And, I have lost 93 lbs. Been below goal and lifetime almost 2 years.

Chicken broccoli mushroom alfredo over zoodles! Store bought roaster chicken breast only, cut in chunks, no skin. Broccoli and mushrooms sauteed with minced garlic and pam olive oil spray. Layer chicken and broccoli/mushroom mix over cooked zoodles. Cover with 1/2 cup Ragu Simply Creamy Alfredo Cauliflower sauce. Salt & Pepper to taste. Quick, easy and Yummy! Only 3 pts. per serving on blue! (doesn't taste like "traditional" alfredo, but still very tasty, even my husband loved it and he loves regular alfredo! lol)

Rotisserie chicken, stove top chicken stuffing, fresh green beans, make my own chicken gravy with fat-free low sodium chicken broth and thicken it with corn starch first saute minced onion, poultry seasoning then add broth & 1 -2 tablespoons of corn starch and stir til it thickens. Only 3 points for stuffing and 1 point for gravy.

Tonight we had chicken chili Tuesday - Tacos Wednesday - kiddos will eat on the run. I'll bring snacks to hold me over until I get home. We have eye appointments, basketball camp and after school programs. Thursday - left over grilled chicken Friday- shake and bake chicken with salad and fruit

I made a ZERO seafood soup tonight with low point zucchini fritter for dinner tonight. 1st I make all my own broth in my crock pot. If I have shrimp or mussels I put the shells in my crock pot with. Odds and ends veggie like the peels of veggies tough parts of broccoli and cauliflower. And enough water to cover. I leave it alone for 8 home hours. Then strain it. I freeze it in 2c containers and Mark it . I do the same with chicken bones, pork bones. No salt, no fat as I skim it off after it cools in fridge over night. Now for the seafood soup. I put 12 oz shrimp, a can of claw or lump crab, and 2 white fish fillets broken into bits. 4 ribs of celery diced, 3 carrots diced and an onion diced. Add a tsp of each thyme, dill and oregano. Cook till veggies are tender or place all In crock pot. Zucchini fritters: 4 zucchini grated, or a package of carrot and zucchini zoodles chopped, 1c corn, 4 eggs beaten, 1/2 tsp basil, oregano, and garlic powder. Also 1/2 c shred cheese and 3/4 c flour Grate zucchini. And squeeze dry in a towel (-sav3 the juice for your next broth). In large bowl mix together all the ingredients. Spray large skillet with PAM, scoop better into hot skillet. Check after 3 minutes, flip when golden brown, cook another 2 to 3 min. Serve hot. I use a meat ball scoop to measure each fritter. I make about 20 in each batch. Store left overs in fridge, heat and serve.
