@shinleaf what is your recipe?

1 head Cauliflower/ to small florets. Set aside. 1 med. carrot/dicede, 2 stalks celery. 1 whole onion. 2 1/2 c. water, 2 chicken boullion cubes. ( I only use Knoor boullion cubes) 1 vegetable boullion cube, Salt and pepper. 2 c. of 2% milk mixed with3 tblsp cornstarch. Bring to boil then put your cauliflower. Simmer for around 15/20 min. I put cauliflower in last so it doesn't turn to mush. Also seems like a nice base for clam chowder. 159 calories per 1 cup. I know it sounds bad but is delicious. Also I add a bit of garlic powder and use fat free half and half sometimes.

Sloppy squash. make sloppy Joe's using ground turkey breast. Slice up zucchini squash and put meat mix over it. Bake until squash is cooked through. Top with low-fat cheese and broil until browned.

@multilingual I just saw a show about using half of hamburger or ground turkey, add cut up mushroom and another vegetable to make sloppy joes. Same for mac and cheese, use half of the noodles and cheese, add riced cauliflower and butternut squash, meshed.

@insolvent6 I try to do that as much as possible with swapping out half the carbs/starch for some healthier filler. I rarely eat red meat anymore. Actually prefer using ground turkey :)

Stuffed Peppers at 1-2 pnts per serving. Details if you ask.
by (7.7k points)
@castellany I use Aloha Peppers (red n gold streaked, Kroger or Schnucks) but any bell pepper is fine. Prep peppers, hollow out n clean out ribs n seeds (you might prefer halves) drop into a pot of boiling water, turn off heat. Meanwhile, in a saute pan, brown grnd white turkey, add chopped onion, chopped grn pepper, and a taco pkt (or other seasoning packet, but grnd turkey needs a lot of seasoning) add a sm can of diced tomatoes with juice. Optional, add corn or black beans or canned diced carrots. Add About a cup n half Riced Cauliflower. Drain peppers. Nestle the peppers into the meat mixture and spoon the meat mix into the peppers. So far, all zero! Put a bit of 2% shredded cheese on top of each pepper. Add lid. Turn off heat. Only points is cheese. Delish.

Chicken turkey burgers! 1 lb ground chicken 1 lb ground turkey 1 tbsp Worcestershire 1 tbsp soy or coconut aminos 1/4 c panko Seasonings of choice Sauteed sweet peppers, garlic & onion added to the meat. Patty it out slightly bigger than slider size & cook it on a skillet med-high a couple minutes each side. Add some cheese of choice and finish cooking in the oven for 10 minutes at 350. Depending on the cheese you use and how much, they end up being around 2 points a piece. SO GOOD.

I was getting into a huge rut so I joined Home Chef and I get 3 meals a week. It is perfect for me and my husband and you can choose calorie and carb conscious meals. At least I don't have to think 3 days a week
