I preheat my oven to 270 degrees. I oil a glass oven safe pan. Put the salmon in the glass pan. I might put salt and pepper or any other type seasoning on top. Put in the oven for 35 minutes. Done perfectly every time. If it’s a thicker piece you might want to check the middle for doneness, but this has never failed me. We have salmon at least once a week. This also works with cod. Yummy. Sometimes I’ll just put some fresh salsa ( I get from the grocery store). I’ll put this on top when I bake it. So yummy and zero points on the blue plan

I salt and pepper and sear it on both sides. In the mean time I make a glaze with 1/4 cup low sodium soy sauce 1 tablespoon honey. 1 tablespoon minced ginger and 1 tablespoon Dijon mustard. Spoon over the salmon and put in 350 oven about 7 min. Yummy

Make a salmon pocket! This is best on the grill if you have one, so more of a summer time thing, I’ve tried it in the oven and it’s not as good. Take a large piece of tin foil and line it with baking spray or margarine. Put potatoes, sweet potatoes or even turnip, sliced, on the bottom layer. Season Next layer will be bell peppers, whatever colour you like. Season Next is onions, I like yellow, but you can use any. Season Then mushrooms and zucchini. Season. Spray again with cooking oil (optional) Top with a salmon filet. Bring the corners of the foil together and seal it up well, making a pouch. Don’t flatten in. Bake or grill for 40-45 minutes.

If you like sweet and tangy, I make a glaze which is one part Dijon mustard to three parts brown sugar. If it is too thick, you can add a little water. I salt and pepper the salmon and then pour most of the glaze over it. I bake it at 400 til done. Before serving, I top with the rest of the glaze and some chopped scallions. Easy and yummy!
