My husband can’t do dairy, so we have a soup recipe that asks for heavy cream- we use unsweetened almond milk and add cornstarch to think RN it like the heavy cream would.

I've never had that happen but I use it in soups and warm things, not desserts. Maybe that makes a difference?

I googled what you can sub, the only things I saw that weren’t dairy were to mix soy milk and olive oil or coconut cream.

Google substitution, I know butter is made from cream but I do not know the specifics on how to use it as a sub. I wouldn't use anything skimmed for heavy cream though.

I used it in creamed soup and never noticed Used in mashed potatoes and I added bit garlic and onion powder so they were good put couple table spoons in a tomato sauce I was making was good. Trick is start by using a bit taste and decide as you go
