Cut up roma tomatoes, red onion, cilantro, garlic, jalapenos and put in bowl with some salt and pepper. Squeeze a lime on top and let sit. If you want a sweetness chop up some fresh pineapple. I dont have measurements, everything to taste.

Cowboy caviar Ingredients ("Caviar"): 3 Roma tomato's 1/3 C red onion 1 15 oz can black beans (rinsed and drained) 1 15 oz can black eyed peas (rinsed and drained) 1. 5 C corn (frozen, fresh or canned) 1 Bell pepper ( i used a half of red and green for color) 1 jalapeño (seeds removed very small dice) 1/3 C Cilantro Ingredients (Dressing) (all spices can be adjusted to taste or changed) 1/3 - 1/2 C 0 SP salsa 2 tbsp fresh lime juice 2 tbsp red wine vinegar 1 tsp sugar substitute (i used monk fruit) 1/2 tsp salt 1/2 tsp pepper 1/4 tsp garlic powder if you are a visual learner like me and want to see me whip this up step by step, see link below. It’s all add free and un-monetized. I do this purely for the love of WW and our health!  Instructions: 1. dice (small) all caviar veggies/fruits and place into large mixing bowl 2. in a separate bowl whisk together all dressing ingredients 3. combine dressing with caviar when ready to serve. 4. keep in fridge in airtight container.
