Question. and forgive my ignorance.Question. and forgive my ignorance. Is half and half basically "light cream"? I've been wanting to make an alfredo sauce but I've been looking for a substitute for heavy whipping cream. Thanks!

there is also a light cream that has 6% mf and a fat free cream that has 0%mf. If a recipe I was making asked for light cream I would probably use the light cream. Half and half has 10%milk fat (at least the stuff I used to buy did).

I use skim milk. Still yummy! After that substitution repeatedly, heavy cream seems to rich and seems to overwhelm the real taste of all the ingredients.
