So I’m going to share a recipe from Weight Watchers of the 1970s! My mother attended back in the day and she passed along this cottage cheese recipe that I think is really good. I don’t have exact measurements. Mix cottage cheese, cinnamon and a tiny bit, maybe a capful, of vanilla extract. Then bake it until it’s warm, top caramelizes a bit. If I remember correctly, my mom might’ve spread it on a piece of bread & baked the whole thing. It’s actually very tasty. It’s pretty good uncooked as well although the vanilla extract can be overwhelming if not cooked.
