With doordash or UberEats or any of those, you can work when you are able to. No set schedule, you're not gonna get fired if you can't get on. This is what I would do especially if you already have a full time job.

per hour. I would around 24 hours a week. You can work as much as you want and in any area you want. You choice your own hours if they are available. You can schedule up to a week ahead. I do it as soon as that day comes up so I know I got the schedule I want.

Date night baby sitter for friends/neighbors. I've thought about this while my husband looks for a new job. Advertise you are available to watch an X amount of kids. Provide pizza for dinner. Flat rate, pick your time frame and should make some quick cash in 4-5 hours.

You can pick up hours with a staffing company for catering. You typically get hired easily and then pick up shifts as an independent contractor so you will make usually around $100 a night serving drinks and food to people at weddings/events. ($15-20 an hour)They are always looking for people because in the food industry there is a lot of turnover and people.
