Hi there, last spring I planted 6 rows of potatoes and they all did pretty well with good foliage and I set up a water sprinkler system to water them from my well. Then because of health problems in my family I was unable to harvest them but a neighbour switched the pump on every day untill the well ran dry in the drought. At long last I have been able to put a fork along the rows and there are some lovely tubers but they are all beginning to sprout. I have cut off the sprouts and cooked them and they are edible if a bit transluscent and watery but there is no way My wife and I can eat them all. What do you suggest I do with this potato bed?

Dig it over and ensure that you have removed every tiny bit of potato, use some of the chitting potatoes to establish a new potato bed on another patch of ground. On this old potato bed, dig in some compost or fertiliser then plant something that isn't a root vegetable. Beans are a good bet.
