I’ve boiled jicama for 15-20 min. before baking it, and it still never gets it entirely soft. ♀️

I actually stopped cooking it and only eat it raw now in Janeva’s caramel jicama stix dessert recipe. I switched to rutabaga for fries because that is the closest thing to a potato IMO and actually gets soft when you bake it.

I microwave in a bowl of water for 15 mins and then cook. Never really liked it so now I shredd it and make hash browns. Goes great with eggs. game changer for me

How long did you microwave it? It usually microwave it for 5 minutes for 2 cups and 7 for 4 cups. It is then no longer crispy.

don't put any water in with it. Just cut it up and microwave it. It has a lot of water in it and you will need to pat it dry before baking.
