More of an eero question, but when I set up Eero do I need to reconfigure all my Ring devices to a new WiFi signal?

Set the same SSID and password on the new WiFi equipment and you don't have to change the devices.

I really depends on your original router and The EEROS - sometimes even with the same SSID and password, you may have to FORGET the old network, due to MAC address and DNS and proxy issues. I had to do this when I added a google mesh system!
