I used to be able to snooze the ring doorbell and floodlights and it would keep quiet from alerting me when the landscapers are here. Now even when snooze, its alerting me when theres motions alerts. did anything change?

Do you have Rapid Ring installed? If you do, you need to hit snooze on both apps.

No rapid ring. just the ring doorbell and flood lights, with amazon echo connected to it

Are you talking about snoozing your Echo devices or your mobile device?

I dont think you can snooze your Echo devices from Ring app. You need to do that from Alexa app.
