I would like a few affordable vanilla android tablets on the wall. Something I can customize, and not like amazon fire tablet. Would probably just run HABpanel, but prefer rootable so can do things like wake up when camera sees motion. What are you using? I would like recessed, but slim surface mount is okay too. PoE is an option for one or two locations, but easiest is really to hardwire some kind of 5V USB thing into the nearest light switch junction box.

You can root a Fire HD tablet - and install Google Playstore (even without rooting). That's what I use - works well with Home Assistant - can help but think you could do the same for openHAB. I picked up a couple of Fire HD 8s that were refurbed for $35 each.
