Hello I am wondering if something exists. A single smart switch that controls a fan light and fan speed ( L, M, H). I thought I saw something from Innovelli but that was quite awhile ago and it doesn't seem like it has come to market yet (maybe it never will? ).

Innovelli's product isn't out yet. If you have separate switches already wired, GE z-wave switches are the easy option. If you only have one switch for fan and light, the Hampton Bay Wink enabled remote is an option but you'll need to make sure you have a zigbee repeater (smart plug) close by.

Look into the home depo zigbee fan/light controller and companion switch.

Infrared ones utilising a broadlink rm pro or logitech harmony for voice control, wireless buttons etc is an option if you can't find what you're looking for

If the fan has an RF remote get a Bond. I have full control of fan speeds and lights in ST through Bond Bridge

I left my light hardwired and put a smart bulb in. My fan, I installed a GE z-wave smart fan switch.

I had Bond. Got rid of it for GE Fan switch and Zooz light switch. Inovelli's solution looks pretty cool too when that comes out.
