Before WW I mixed salsa on my rice at Mexican restaurants. Now I try avoid restaurants and I put salsa on cauliflower rice and it’s not bad (to me) to each there own. It was 0 points for it all on green

I like to roast mine in the oven on a parchment covered cookie sheet first. Spray first with olive oil, salt and pepper. 400 degrees until tan-brownish. Gives it a nutty flavor-I also roast cauliflower pieces the same way. Whatever dish I normally make with rice I use the roasted cauliflower instead. We buy the big bag at Costco.

Smoked turkey sausage sauteed with cabbage, peppers, onions, mushrooms, and any other veggies you may want to toss in there. Eat it over the riced cauliflower. My mom used to make this with regular rice and I swapped it with the cauliflower and it was soooo good.

Look up cauliflower rice recipes on Pinterest. I have made a yummy parmesan cheddar cauliflower rice and a spinach/mushroom one. All very low points. My favorite go-to is lime, salt, cilantro and black beans. Tastes like chipotle.

I made a Skinnytaste recipe the other night where you sprayed the cauliflower rice with some EVOO, mixed it with some minced garlic and S&P and roasted it on a sheet pan in a 425 degree oven til it was lightly browned. Add a squeeze of fresh lemon juice before serving, it was really good
