My ex Austrian Mom in Law always made a simple lentil salad that I love. Cook the lentils following directions on the bag, , , , Rinse with cold water. Red wine vinegar to taste, chopped onion, as much as you like, salt & pepper, and a bit of olive oil if you like. If no on the olive oil, add a bit of water to cut the vinegar a bit. For that matter, use whatever vinegar you like best.

@thomey I don’t really have a recipe, just substitute lentils for mince. I fry onion and mushrooms, add diced cooked carrots and lentils, a stock cube, passata, thicken with corn flour if needed. Put in oven dish, top with mashed potato or sweet potato, bake until top goes brown.

Crockpot, small bag lentils, 1 small head cabbage grated, finely diced onion, large can chopped tomatoes with juice, salt, pepper and any spices you like. Cook on high until lentils are soft.

I make a dish with french green lentils and it's a family favorite. I Serve it whenever I make a pork roast. I cook the lentils according to instructions on bag. When they are finished, I sauté diced carrot and celery in a little olive and a bit of butter until really soft and then add them to the drained cooled lentils and then I mix in about half a cup of bubbies sauerkraut as well. It may sound like a weird combo, but it is so good!

Take some onions or onion powder, salt, ginger, garlic and put lentils in crock pot with veg. stock and cook. Can eat by it's self, make a wrap with lettuce or tortilla. Can also eat it with rice or naan bread. Can use sour cream or yogurt as extra but not necessary.

A Greek bowl. Lentils on the bottom chicken cooked with lemon and oregano chopped into bite size pieces. Feta cheese kalamata olives cucumbers and tomato and Fage non fat yogurt. Place on top of the lentils. If you have dill it’s delicious on top of it all!

@thickset3 Peloso no sauce. I just cook the lentils like I would for lentil soup and use that over pasta with a little less of the liquid. Sometimes I'll add sauteed cherry tomatoes as well.

I just made an awesome soup. Soak a third of the bag of lentils in water overnight. One can peeled tomatoes. Same amount homemade (or bought) chicken broth. Half teaspoon cumin half teaspoon turmeric. Half cup diced celery half cup diced carrots. Leftover grilled chicken. Yum. Ohhhh and. add some olive oil.
