I would personally use sleepers as alot thicker and stronger

Depends on how many high you go and how you plan on fixing I'm just about to rip out that's two high and they've collapsed under the weight

They have a tendency to crack. Not designed to hold weight

The middle is retained by gravel Boards and concrete posts.

Just to add, the area is 12ft wide x 5ft high and the garden goes back about 20ft on a slight incline so I was thinking 3 concrete posts and 10 gravel boards for that area

@inimical719 you would need to backfill with concrete at an angle and put some weep holes in

I have got gravel boards retaining a 5ft mound of mud which is about 12ft wide also it was here when I moved in and it is buckling really bad I am in the process of getting rid of it and putting in a concrete wall then I was going to clad it with composite boards to make it look nice
