Question

If conversion tracking was set up incorrectly and one conversion was being tracked as 2, is there any way to fix the historical data?

Sort answer is, no you can't. You either start clean with a new conversion or you can keep the old one.

That's a tricky one, have you tried their chat support? If it were me I would probably fix the tracking issue and annotate that point in time so you can start tracking accurately going forward.
