Looking on the Phase 1 sheet, I don't see that mustard is among the seasonings that are acceptable. What about Dijon mustard?

I know Dijon is as I use it to make my dressing.

The only mustard on the sheet is hot mustard. That's odd. I think any mustard that doesn't have non-protocol ingredients is fine in reasonable amounts, especially those that are 0/0/0 as a seasoning should be. Some mustards contain wine, some contain sugar. I don't have any dijon in the fridge to check a label.

Emeril’s Dijon mustard is what I use. But not all dijon fits. You need to read the ingredients

Any mustard with protocol ingredients is fine. I think they used "hot" to mean not honey mustards. It was an odd choice of words.
