Today is my weight in day and after a week of poop I am ready to have my safe little weeklies in my stash. Focusing with a plan this week to stay on track and eat wise. With that said I am getting tired of veggies. Do you guys have any ideas on how to make them more appealing?

One cup nonfat plain Greek yogurt one packet of hidden Valley Ranch dry dressing mix equals veggie dip at zero points

That’s a shame. Skinny girl has some great dressings you might try some of those to dip your veggies into. They have a very wide variety of flavors

Roasted veggies are delish - I like to roast beets, asparagus, Brussels sprouts, carrots, onions, peppers, zucchini, butternut squash, tomatoes. Sometimes a mixture of a few, sometimes just one at a time. A little olive oil and garlic powder plus salt and pepper.

Don’t over cook your vegetables. Don’t be afraid of a dab of butter and some salt and pepper, just don’t overdo it!

I use valveeta cheese sauce in stuff. its not as bad point wise as you would think

Spray Pyrex then alternate layers of thin rounds of veggies such as green and yellow zucchini, eggplant, onion, apple, tomatoes . Drizzle a small amount of olive oil and season with steak spice or something you like. Bake 30 min @350* the sprinkle with grated Parmesan and bake 10-15 minutes more. 6 servings 1=pt. Delicious!

Make soup! I blend my vegetables left overs to make it thicker and more filling plus Husband is clueless! Or try vegetable lasagna or curry

Roast root veggies sprayed with a little EVOO, Use squash in place of potatoes just mash and add or spray with mutter. Coleslaw.

Soup works for most veggies. Air frying works great too. I love air fried avocado. I slice them, then dip in egg and a little panko, spray them quick and throw the in the air fryer. 375⁰ until the panko is browned

Visit grocery store that is your usual, buy a “convenience/quick meal” vegetable and a raw that’s not your usual. The minute you get home, clean the raw one into portions and store in frig for when you “feel hungry”, and use packaged when you are tired/bored with cooking. This week I bought baby turnips for raw (yummy, sweet & crunchy) and steam in bag kohlrabi “linguine” at Whole Foods, on sale. Haven’t tried kohlrabi yet. Lots of new frozen varieties but takes time to review sodium, etc.
