I need a way to get more veggies at lunch. Getting tired of salads and I’ve heard a comment or two about the teachers lounge smelling like broccoli. Anyone got great soup ideas that are Phase 1 friendly?

Riced cauliflower in the chicken soup is really good.

Pickles, cucumbers with lime and tajin seasoning, riced cauliflower or broccoli pureed into soups you've premade, bell pepper sticks, tomatoes sliced with salt and pepper, jicama sticks. in case you needed any ideas besides soups.

If your teachers' lounge has a blender, use it. If not, invest in (and bring to work) a Magic Bullet. Put a few ice cubes, 1-2 cups of spinach, and a chocolate shake (IP packet, liquid, or ProtiDiet) and whip into a shake. You can't taste the spinach, even though it'll look green. Obviously, add some water to the mix if you're using a dry-shake mix!

This is my go to right now also. I make enough on Sunday for the whole week. Store them in mason jars. They’re good cold or warmed up.

I like the cream of broccoli soup I bought from Nashua nutrition. I add 2 cups steamed broccoli to it.

Soup! I make soup every weekend. I make one I lovingly call “ugly vegetable” I take all the leftover and wilting assorted vegetables cook in broth with seasoning (usually a few bulbs of garlic, and Italian or oregano herbs) I like mine chunky, my husband purées it. He calls it a hot vegan smoothie!

Zucchini noodles (you can buy them frozen) are good with IPA chili. I also like jicama and celery with peanut butter dip (quest PB powder with 1 tsp oil, dash of salt, a bit of water). Spaghetti squash with a bit of SF tomato sauce. Steamed asparagus with lemon and olive oil. Sauteed mushrooms are good in IP risotto. Riced cauliflower fried rice.

I also do the cauliflower pizza crust in Janeva's cookbook. then top with peppers hamburger, onion. You can play around with different seasoning

Idea: Switch a bar for breakfast and add a spinach shake at lunch
