I make gf dough all of the time. I make my own gf flour mix (cheaper and just as good if not better than premade): 2c rice flour, 1/3 c tapioca flour, 2/3 c potato flour, 1 Tbsp xanthan gum. I multiply the recipe so I always have some around. When you make your 2 ingredient dough, use a tsp if baking powder per cup of flour used. This works very well for me. Almond flour is much higher in points, so watch out if you use that.
