I’ve made stuffed green (or red or orange) peppers. Brown 1 lb ground venison (or bear) mix in one bag (steam bag) riced cauliflower. Then add one 10oz can of Rotel (tomatoes w green Chile), mix, Mix in some WF bbq sauce and or WF ketchup to taste. Simmer and stir together for about 5 minutes. Stuff raw peppers (4-5) place on cookie sheet and bake at 350 for about 40 minutes or until peppers are soft. It’s good- could use some heat. I will add some jalapeño to the recipe next time. Note: get peppers that stand nicely on their own - or they can be hard to keep upright once stuffed and baking.
