I should know this, but I don't. How do you measure one cup of some of these vegetables, for example: jicama?

@makalu34365 if i julienne the jicama how do you measure 1 cup? Lol. I'm just thinking it wouldn't be an accurate measure. Am I making this harder than it should be?. Lol

@soulier87. OK another question. I think I have already ruined my week on select veggies. Cause the select are the ones that I want and I'm certain I've consumed way more than 4 cups of select veggies and it's only Monday! Yesterday I had cauliflower rice with tomatoes (Rotel type), and today I just made the jicama sweet pepper slaw. I used two whole peppers. Ugh!

@whippersnapper You get (and have to have) 4 cups of vegetables per day. I always use the weight chart because it’s impossible to stuff some veggies accurately in measuring cups. The 4 cups daily can be all from the Select list if you wish. Occasional can be substituted for Select up to a maximum of 4 cups per WEEK, along with as many from the Unlimited list (raw) as you want. (Remember, lettuce can never be counted. It is on the Unlimited list only. The only Occasional vegetable I see that you mentioned is the Rotel tomatoes. I would just let today go and start tomorrow under the guidelines on the Phase 1 Protocol sheet.

@sweetbrier I made the jicama sweet pepper slaw but did not measure the veggies. I used 2 whole peppers. Certain that is more than 4 cups. Then yesterday was the cauliflower rice with tomatoes, again between the 2 dishes (within 2 days) i have consumed way more than the 4 cups. So I'm done with select veggies for the week right? Good grief I should know this. My 2nd time to do IP. Why can I not remember this stuff? ‍♀️

@whippersnapper I still think you are ok. You can/must have 28 cups of veggies per week. 4 of those cups can be from the Occasional list. The rest can be from Select or Unlimited (except lettuce which never counts). I just measured one regular size bell pepper. At most it would amount to one cup. I would still just re-read the vegetable portion of the sheet and start fresh tomorrow, forgetting about the last couple of days. Just my opinion! All the best to you!
