I make lazy cabbage rolls with napa cabbage and riced cauliflower. Just sauté it in a pan with olive oil, salt, pepper, onion powder and garlic powder. It is supper yummy! Even my hubby, the self proclaimed cauliflower hater, loved it. In fact he didn’t believe me when I told him he ate cauliflower lol.

Not cabbage rolls but I do stuffed peppers with them. I also dice up zucchini and mushrooms to pack it with veggies , sometimes spinach as well.

Just used tomato sauce. They were delicious and you couldn't tell it was cauliflower instead of rice.

For a Ukrainian Christmas Eve dinner (which has to be a lenten meal, i. e. no meat), we did cauliflower rice and mushrooms in cabbage rolls. It worked great. We cooked the cauliflower rice in the skillet to get rid of the excess moisture. That made it feel more like rice.

I use cauliflower rice and chopped mushroom as my filler with either ground beef or chicken (or both) to make meatballs, stuffed peppers, stuffed cabbage, meatloaf, etc. vary the spices and you can do anything with cauliflower rice that regular rice or bread crumbs can do !
