I have tried out the turnip fries a couple of times and cant get them crisp.

I have tried out the turnip fries a couple of times and cant get them crisp. I cut them, soak them, then dry and season ( small amount of oil added) then put in the air fryer. Taste fantastic but are soggy. What am I doing wrong?

You'tr not doing anything wrong - the water content is crazy high with turnips and they tend to be limp. I like them still, though!

I haven’t tried it myself, but I read that you can dip them in egg whites and that will make them crispier.

I cubed them and cooked them at 350 in air fryer for 10 minutes then at 400 for the rest of the time. It really helped make them not so soggy. I spiced them first.

You might try covering them in Kosher salt to pull out the water, leave 30 mins., then pat dry with paper towels and clean all salt off with paper towels. Then process as usual.
