I use the a teaspoon of sugar free cool whip. Ssshhh

Make rhubarb compote (stewed rhubarb) & put it on top of the set jello. A real explosion of flavors

This isnt exactly like whipped cream but it's pretty good! I've used it on mug cake and pancakes before too. It comes in a few flavors

Not a whipped topping but you can make the maple oatmeal into a topping and make a "rhubarb crumble. "
