Hey all!  What are you guys doing with zucchini?Hey all! What are you guys doing with zucchini? I didn’t really eat it before IP, and beyond sautéing it, I have no idea what to do. I see a Janeva recipe for “baked zucchini” that seems to resemble Apple pie filling - has anyone made this? I love pie dearly but pie got me here.

I grate it and hide it in basically any baked good. We put it in waffles almost everyday. I also dice it up and mix it with diced yellow squash and roast it in the air fryer. We like it really crispy (kind of blackened).

Zucchini lasagna is really good. I also love the chocolate zucchini muffins

I like to sauté zucchini with tomato, onion, green peppers, a little garlic, salt, and a pinch of basil.

Zucchini chips are awesome! Cut them into thin coin shapes, pat dry the moisture out, mix it with some olive oil and spice and bake in the oven at a low temperature like 225 for about 2-3) hours

I love spiralized zucchini! Sometimes I eat it by itself cooked in a pan with peppers, olive oil and seasonings, and sometimes I make spaghetti with it!

I have made the “apple” pie filling from zucchini and it is amazing! I deseeded and sliced 3 zucchini (to resemble apple slices), lemon juice, lime juice, 1/4 cup water, cinnamon and nutmeg, put it all in a loaf pan then sprinkle the packet on top(I have also not used the packet and it is still great) bake and enjoy. I usually get two servings.
