Need help, I meal prepped this past Saturday. I made muffins for breakfast and snack to last through this friday. Had them stored in containers on my counter. today they started to show signs of mold:(. How does everyone else store their bake goods for the week? Should I freeze them and take out a day before? Should I put them in the fridge? Open to any suggestions!

You should put them in the fridge. and make sure they are cold before putting them in a container. you can freeze if you think it will take more than a week to eat

Anything that is meant to stay moist (breads, muffins, etc) is subject to mold. Even IP recipe stuff. IP Muffins should be refrigerated and stored in a sealed container with as little air as possible in the container, so that the air won't leach out the moisture. The best way to store, I've found, is in a Zip-Lock baggie, and right before you seal the zip, use a STRAW to suck out the air so the baggie clings tight to the muffins. If the muffins are going to be in a plastic container through the day until lunch, you may want to try throwing in a couple of celery sticks to keep the container filled with moisture, but still keep the container in the fridge.

Long term freezer storage should be fine, but the same rule applies-- keep them sealed up tightly-- air removed from a ziplock is best. Thaw in the fridge overnight. Keep the moisture where it belongs-- inside the muffins and not in the container's air space.

I freeze mine. They need to be refrigerated if they're going to be out for a few days
