Hey y’all I wanna make eggplant parm and I have potato purée and I have regular pancake mix, which one would give me a better “batter” feel to it? Also recipes if you have any?

Definitely the potato. The pancake has a sweet flavor

@erasion164 so I would just dunk em in egg wash and then the potato purée powder? Do you add baking soda or salt?

I add both- plus garlic and paprika. When I want something fried- I mix up an egg with a teaspoon of yellow mustard and dip in the powder, then egg, then the powder again- so that the breading is thicker so it gets really crisp.

I use a skillet with canola oil- it’s probably all of the oil we’re allowed for the day but ‍♀️
