I push myself to eat 2 totally new to me meals a week for dinner AND for lunch. but I try to keep everything else pretty much the same for ease (and because I know what works for me). Jenevas book is good - or join her FB page and check out her recipe files. Pinterest has great recipes too - I type in keto meals and then adjust the recipes to avoid non protocol ingredients. Right now (because it’s hot here) I’m eating tacos made with lettuce leaf shells. I like making shepherds pie with ground turkey and making a cauliflower mashed ‘taters’ on top. For Minch I like Stuffed roasted poblanos (stuffed with cauliflower rice) . I’m eating lots of stewed rhubarb at breakfast (I like to get a jump on my veggies early on). Also, meatloaf made with ground turkey, shredded zucchini, mushrooms and peppers - I make a loaf with 1 1/2lb of ground meat and 2 c each of the veggies do that I get 3 meals out of it - it is complete!

I am in a no fuss no muss phase. Breakfast is always a shake from the chocolate drink mix. For lunch I have been doing a lot of grabbing veggies, dicing them, and sautéing them. I usually use a combo of 4 so it’s easy to just do 1/2 cup each. Sometimes I’m so lazy I literally just eat them raw. I do enjoy the sautéed veggies tho. If I am feeling ambitious I make the cauliflower hummus. Or I make egg cups and make enough to spread them out for lunch and dinner. Those are my favorites right now. I have an afternoon snack where I make “cookie dough” with the choc chip pancake mix. My go-to dinners are ground turkey seasoned like taco meat with riced cauliflower added in to “beef” it up. I use it to make a salad or pepper nachos. Or I’ll do Asian style with cabbage and ginger, soy sauce, sriracha, and a little Walden farms syrup.

I have cereal for breakfast. I make a vegetable soup once a week for lunch vegetables - 4 cups vegetable broth and I rotate the vegetables (Costco is great for this as they have frozen organic vegetables that’s perfect for soups - broccoli, cauliflower, zucchini, brussel sprouts and asparagus and they also have celery in produce section - makes 8 servings. Lunch protein is usually a chocolate pudding. Snack is packet baked as a chocolate cookie/muffin. Tonight’s dinner was turkey tacos. Last night was pork chop with braised red cabbage. Previous night’s were sausage zucchini lasagna, egg salad with turkey (organic Plainville Farms turkey breast from Costco), pizza with ground turkey with sausage seasoning, turkey burgers, chicken and pork fried cauliflower, pork tenderloin with zucchini apples, zucchini noodles with tomato sauce with turkey meatballs, salad with hard boiled eggs and chicken breast with apple cider vinegar/olive oil dressing.
